I really am no expert in Asian cuisine, but sometimes I just have to go for it.
And then it has to be a simple recipe. I tried this one yesterday and it is not only easy and quick to cook, it also tastes very nice. Here we go:
Ingredients:
- 600 gr of salmon
- 1 teaspoon salt
- 0,5 teaspoon pepper
- 400 ml coconut milk
- 1-2 tablespoons ginger, cut in thin strips
- 1 Lime, zest and juice
- 1 crumbled dice of fish fond or the equivalent liquid fish fond
- 1 red paprika, cut in thin strips
- 1 red onion, cut in thin strips
- 150 gr green beans
To serve with:
- coriander
- lime wedges
- rice or glass noodles
Preparation:
Preheat the oven to 150 degrees Celsius. Remove the skin from the salmon. Put the fish in an ovenproof form, salt and pepper it.
Mix the coconut milk with the ginger strips, lime zest and juice and the concentrated fish fond.
Spread the vegetables around the salmon and douse everything with the coconut milk mixture. Cook in the middle of the oven until the core of the fish has a temperature of about 50 degrees, ca. 25 mins.
Serve the fish with coriander, lime wedges and rice or glass noodles.
